Beautiful aromatic richness of citrus fruits, nose of green apple, quince and pistachio. Supple and silky wine to drink young. After a few years of aging, becomes a charmer. At the start of a meal, an ideal complement to enjoy fish, shellfish, oysters and shrimps.
This cuvée was awarded a Gold medal by the members of the jury of the Concours Général Agricole de Paris.
Grape variety : AUXERROIS 100%. Clay-limestone soil. Southeast exposure.
Vinification : Pneumatic pressing of whole grapes Static settling at low temperature. Alcoholic fermentation in temperature-controlled stainless steel vats (16/18 ° C) for 10 to 15 days. Malolactic fermentation avoided. Filtration on land after cooling. Early setting (March / April) to retain freshness in the bottle.
