Auxerrois 2018

This vintage Pinot Auxerrois comes from well-drained clay-limestone hillsides, facing east and protected from humid winds from the west. These slopes are not subject to strong heat and the Lorraine grape variety, adapted to cooler temperatures, appreciates. Harvested manually at the end of September then pressed immediately afterwards, the Auxerrois are fermented at controlled temperature in order to preserve fruit and freshness. They are then vinified and aged on the lees separately in stainless steel vats and then assembled just a few weeks before bottling.

The Auxerrois grape variety was developed in Lorraine when the vineyard was replanted after the phylloxera. Teams from the Laquenexy fruit research center have adapted Pinot Blancs from nurseries in the Auxerre region to clay-limestone soils and the Lorraine climate. It expresses itself perfectly in the region and is exported very well to the northern wine regions (Luxembourg, Germany, Belgium, Alsace, Canada or USA).

On tasting, the color is pale yellow with pearly reflections, the expressive nose with a dominant of apple, William pear and notes of mirabelle plum and white fruits. Round and harmonious on the palate with citrus flavors.

Serve it around 8/10 ° C as an aperitif, with fish, shellfish, snails, frogs' legs, white pudding or fresh goat cheese.
